Ingredients  Required:

Preparation Method:

Step 2: Grate the peeled carrots in a food processor or with the help of a hand grater.  
Step 3: Dry roast the nuts like pista, cashews, and almonds until they are crunchy. Then chop them into fine pieces after they have cooled down.
Step 3: Fry the chopped nuts in 1 tablespoon of clarified butter or ghee until they are golden brown.
Step 4: Add raisins to the above mentioned fried mixture. Fry them until they plump up. Remove all the nuts into a plate.

Cooking Method:

Step 1: Boil  1 to 2 cups of milk as per the requirements in a deep pan or a heavy bottom pot.
Step 2: Add the grated carrots into the boiling milk and stir the dish continuously.
Step 3: One should never leave the pot of boiling milk unattended as the milk will get scorched.
Step 4: After the milk has completely evaporated, add a half cup to 2 teaspoons of sugar as per the requirements.
Step 5: The sugar will tend to release lots of moisture, This, in turn, will make the carrot or the gajar mixture gooey.
Step 6: One needs to cook the whole carrot mixture until half of the moisture evaporates. Then add 1 tablespoon of clarified butter or ghee to the mixture.
Step7: Saute the carrot halwa well in the ghee until the moisture evaporates completely.
Step 8: Gajar ka halwa is said to be done when it turns thick and aromatic.
Step 9: One needs to add  4 cardamom pots or elachi skinned and powdered to the gajar ka halwa. One can also add grated khoya at this stage.
Step 10: Stir and cook gajar ka halwa until the khoya blends well. 
Step 11: Garnish the gajar ka halwa with the fried nuts and serve it with chilled ice creme.
